This beat frequency is heard as a periodic variation in volume and is equal to the absolute difference between the frequencies of the two forks. In your case, the beat frequency is 3 Hz, and the frequency of one fork is 256 Hz. This means that the frequency of the other fork is either 256 Hz + 3 Hz = 259 Hz or 256 Hz - 3 Hz = 253 Hz. So the other tuning fork could be either 253 Hz or 259 Hz.
